Basil Pesto

Ingredients

  • 3 cups fresh basil, leaves only
  • ½ cup pine nuts, toasted
  • 1 cup extra virgin olive oil
  • 4 garlic cloves, minced
  • ¾ cup Parmesan cheese
  • extra kosher salt, to taste

Method

Step 1

Place the chopped basil leaves and toasted pine nuts into a food processor.

Step 2

Add about one third of the olive oil and puree until smooth.

Step 3

Pulse in remaining olive oil, minced garlic, freshly grated Parmesan and season to taste with salt.
